I always appreciate a nice backlog full of comments on games! even more so who share my dearest love for Medievil, shoot em ups and various Souls games.
I'm glad for you full RE immersion, I must admit I have a huge soft spot for RE5 and 6, but I can see why they aren't fan favourites (despite the hysterical and dumb fanservice). OG RE3 is also a pretty important game for me, I truly love the sense of "choose your own adventure" style and Raccoon City atmosphere.
I'm also glad you've enjoyed RE7! I think it really slaps, but I don't find the later games that replayable compared to the older ones (although I still need to play RE4 Remake)
FF2 is pretty weird: I've always tried to beat it, but never done that because of boredom, despite some neat ideas here and there. I really like the overworld theme and the battle theme, but I need to listen the whole OST a bit more to appreciate it (the boss theme is pretty weird). Hope to beat it this time!
